The oil extraction process of walnut oil is generally divided into two types, one is cold pressing and the other is hot pressing.
The difference between hot pressing and cold pressing
Generally, the cold pressing method is processed in an environment below 60°C and sent to the oil press for pressing. Cold pressing does not require heating or frying the oil. The oil yield is low, the oil color is light, there are few impurities, and more oil can be retained. of nutrients. Generally, no refining is required, and refined oil is obtained after precipitation and filtration. The oil squeezed out in this way has pure natural characteristics and avoids the adverse effects of high-temperature oil processing. Hot pressing of oil requires first selecting and crushing the oil and then subjecting it to high-temperature heating, which causes a series of changes inside the oil, which easily destroys cells and protein components, reduces the viscosity of the oil, and removes the biologically active substances in the oil during the pressing process. A large amount of loss greatly reduces the nutritional value of walnut oil.
Loss of oil nutrients caused by different oil extraction methods
Cold-pressed oil completely preserves the physiologically active substances in the oil, such as vitamin E, which has anti-aging functions, and sterols, which have skin-building effects and enhance human metabolic functions, which are more in line with the needs of the human body. During hot pressing, high-temperature oil extraction causes bioactive substances in the oil, such as vitamin E, sterols, carotenoids, etc., to be greatly lost during the pressing process.
Yield is different
Cold-pressed oil has purely natural characteristics, avoiding the adverse effects of traditional high-temperature oil pressing and processing, and retains the natural flavor and color of the oil, but the oil yield is low. Hot pressing is the process of frying and roasting oil crop seeds and then squeezing them out. It has a special smell, darker color and higher yield.
smell different
Cold-pressed seeds are not roasted and have a light smell and oily taste, but the color is good. Hot-pressed oil has a particularly fragrant smell and darker color. Therefore, from the above comparison, cold-pressed walnut oil is better than hot-pressed walnut oil and has higher nutritional value.
Cold-pressed walnut oil process: walnuts → shelling → walnut kernels → hydraulic oil press → filtering → crude oil
