However, refining leads to the loss of some flavor compounds which leaves the commercial sesame oil far from the traditional "small sesame oil" in terms of flavor.

  Different processing methods for sesame oil can cause significant changes in the levels of pyrazines, sulfur-containing heterocyclic compounds, and benzene series compounds. Among these compounds, 3-ethyl-2,5-dimethylpyrazine, 4-methylthiazole, and guaiacol are key flavor substances that can be used to differentiate between the three types of sesame oil. The volatile compounds in pressed sesame oil exhibit distinct characteristics, with sulfur-containing heterocyclic compounds, specifically 3-ethyl-2,5-di-methylpyrazine and 4-methylthiazole, having high relative content and a low detection threshold that could potentially serve as key flavor substances to distinguish it from the other two types of sesame oil.
