After cooling, the beans are crushed to prepare for fine grinding. Roasting temperature and crushing fineness directly affect subsequent stages.
- Fine Grinding: From Particles to Paste
Crushed beans enter the fine grinder. Cocoa nibs contain significant cellulose, requiring staged grinding: primary grinding into paste, then fine grinding to achieve optimal fineness.
During grinding, surface area expands, particles increase and refine, resulting in smoother texture. The thick cocoa paste provides an ideal base for pressing.
- Hydraulic Pressing: Core of Fat-Powder Separation
The cocoa paste is hydraulically pressed to efficiently separate cocoa butter from solids. The resulting cocoa cake is crushed and sieved into cocoa powder; the separated pure natural cocoa butter proceeds to the next stage.
This process yields both cocoa butter and cocoa powder, offering customers two high-value products.
- Filtration and Refining: Quality Enhancement
Cocoa butter is filtered to remove trace impurities, then refined. Refining delivers finer texture, brighter color, and richer aroma, meeting premium application standards.
