Olive oil has a history of thousands of years in the countries along the Mediterranean Sea. It is known as "liquid gold", "vegetable oil queen" and "Mediterranean nectar" in the West because of its excellent natural health benefits, beauty benefits and ideal cooking use. Edible high-grade olive oil is natural fruit juice extracted from first-ripe or ripe olive fresh fruit through physical cold pressing process.
It is the only woody vegetable oil in the world that is available for human consumption in a natural state. It is native to countries around the Mediterranean Sea. What is olive oil?
According to international standards, olive oil can be divided into 3 groups:
Extra Virgin olive oil: The best olive oil, cold-pressed from fresh olives, with a monounsaturated fatty acid content of 55%-83% and an acidity of less than 0.8%. Refined Olive Oil (Refined Olive Oil): Olive residue is refined again, and its nutritional content is far inferior to that of extra virgin olive oil.
Pure olive oil (Pure olive oil) is a mixture of virgin olive oil and refined olive oil, and its nutritional content is between extra virgin olive oil and refined olive oil
Shelf life of olive oil
Every year, the season for ripening and picking olives along the Mediterranean coast is from November to February. Production using cold pressing process:
Choose good quality olive--Cleaning--Grinding--Cold pressing--Filtering--water-oil separation
The pressed oil is stored in stainless steel tanks buried in the ground (keep a constant temperature), and can be pumped out when it needs to be canned. Extra virgin olive oil is a delicate thing, light or high temperature can make it deteriorate quickly, therefore be sure to choose dark glass or iron to fill the oil products, maximize reduced the impact of light.
The general shelf life is:
Dark glass bottle or tin can: up to 2 years
Transparent glass: up to 1.5 years
Plastic bottle: 1 year
